Medium-Firm Or Firm Block Tofu
This might sound oddly specific, but it is really important! To make these vegan “egg” salad sandwiches, you want to use medium-firm or firm block tofu. These types of tofu are most similar to the consistency of eggs.
Silken tofu is too soft and extra-firm block tofu is too chewy. Trust me, I taste-tested them all.

Vegan Mayonnaise
The next essential ingredient to make these “egg” salad sandwiches is vegan mayonnaise. Nowadays, vegan mayonnaise is easily available in grocery stores, even here in South Africa.

Nutritional Yeast
Despite its unappealing name, Nutritional yeast is a delicious food additive made from a single-celled organism, Saccharomyces Cerevisiae, which is grown on molasses and then harvested, washed, and dried with heat to kill or “deactivate” it. Because it is inactive, it doesn’t froth or grow, as baking yeast does.
Nutritional yeast is not a traditional egg salad ingredient, however, it adds a very pleasant umami flavour to this vegan dish. I highly recommend not skipping this ingredient.

Kala Namak
Kala namak is a rock salt, which is extensively used in South Asian cuisines as a condiment added to savory dishes. This salt, also called black Indian salt, has a sulphurous egg-like aroma and has thus become popular for vegan “egg” recipes.
You can find kala namak in Indian grocery or spice shops. Online, you can purchase kala namak at Amazon.

Here’s a list of the other ingredients you will need to make vegan “egg” salad sandwiches
For the vegan “egg” salad:
- Soy yogurt
- Dijon Mustard
- Chives
- Turmeric
- Curry Powder
- Salt
- Pepper
To assemble the sandwiches:
- Cucumber
- Little gem lettuce
- Sandwich bread
All these ingredients are pretty straightforward! If you can’t get your hands on chives, you could swap them for spring onion or some finely diced celery.
How To Make Vegan “Egg” Salad Sandwich
To make a vegan “egg” salad sandwich, you start by making the vegan “egg” salad.
Vegan “Egg” Salad
Start by dicing the tofu into small pieces. It is my preference to dice the tofu in unequal small pieces. This resembles traditional egg salad the most, which is usually chopped in unequal (because of the oval shape of eggs) small pieces. Contrary to some vegan “egg” salad recipes on the internet, I prefer not to crumble the tofu for “egg” salad.
Add the diced tofu to a large bowl. Then, add the mayonnaise, nutritional yeast, kala namak, soy yogurt, Dijon mustard, chives, turmeric, curry powder, salt, and pepper and fold until everything is well incorporated.
Time To Assemble The Vegan “Egg” Salad Sandwich
Once the vegan “egg” salad is made, you are ready to assemble the sandwich.
Make sure your sandwich doesn’t turn soggy when you meal prep it. Build it in such a way that a dry ingredient protects the bread from any wet ingredients.
For this vegan “egg” salad sandwich, you can add a few little gem lettuce leaves between the bottom and top slice of bread. Follow this sequence: bottom slice of bread, little gem lettuce leaves, cucumber, vegan “egg” salad, lettuce, and top slice of bread! Soggy crisis averted!

Can I make this vegan “egg” salad sandwich without tofu?
Yes! If you don’t have tofu available or you don’t like tofu, you could replace the tofu with chickpeas. Mash them up with a fork and then, add the mayonnaise, nutritional yeast, kala namak, soy yogurt, Dijon mustard, chives, turmeric, curry powder, salt, and pepper and fold until everything is well incorporated.
Can I make this vegan “egg” salad sandwich without mayo?
Yes! If you don’t have mayo available or don’t like mayo, you can replace the mayo with yogurt! Ideally you’d use a very creamy yogurt, such as cashew yogurt!

- 6 slices sandwich bread
- 1/2 cucumber sliced
- 2 heads little gem lettuce
