This post is all about Vegan Tuna Pasta Bake!
Ingredients You Will Need To Make Vegan Tuna Pasta Bake
Vegan Tuna
First and foremost, to make this vegan tuna pasta bake, you will need vegan tuna. No, we aren’t going to be using chickpeas instead of tuna, we are going all in to make this dish!
Warning! This product is very realistically replicated and even smells just as funny as tuna. If you don’t like meat and fish alternatives, this vegan tuna is not for you.
Pasta
I personally like a simple rotini wheat pasta for my pasta bakes! But, nowadays, there are many pasta options. You could choose whole grain pasta or even high-protein pasta, made of pulses. There are also gluten-free options! Choose the pasta you prefer and make this pasta bake recipe your own.
High protein and gluten-free pasta:
Frozen Mixed Vegetables (Carrots, Green Beans, Corn, and Peas)
Is there anything more convenient in this world than frozen vegetables? I think not! No peeling, chopping, or dicing, they last for months in your freezer, and they are just as (if not more) nutritious as fresh vegetables!
For this recipe, I like to use mixed vegetables: carrots, green beans, corn, and peas! But other frozen vegetables could work great too! You could even add some fresh vegetables, such as a few handfuls of baby spinach.
For The Cheesy Sauce
The vegan tuna, pasta, and vegetables, will of course be baked in a cheesy sauce.
For the cheesy sauce, you will need just a few ingredients:
- plant milk, such as soy milk
- nutritional yeast
- tapioca flour
- onion and garlic powder
- Dijon mustard
- salt
My Favourite Meal Prep Containers For Vegan Tuna Pasta Bake
To meal prep this pasta bake, we will be baking our meals directly in their individual containers!
To be able to do that, you need to use oven safe glass meal prep containers.
My favorite oven safe meal prep container:
Benefits of glass meal prep containers:
- Reheat friendly (microwave and oven safe)
- Dishwasher safe
- Doesn’t stain or absorb smells
- Suitable for tableware (it looks neat enough to serve and eat out of)
- Durable
- If they have a lid with snap-lock, they are usually 100% airtight and leak-proof
- Safer for the environment compared to plastic containers
How To Make Vegan Tuna Pasta Bake
1. Preheat Oven
Preheat the oven to 180°C (356°F).
Also grease your oven safe glass meal prep containers with a little bit of oil and drain the vegan tuna in a sieve.
2. Cook Pasta
Cook your choice of pasta according to its package instructions. Drain and set aside.
2. Make Cheesy Sauce
Add all your sauce ingredients to a sauce pan and stir with a whisk until everything is well combined. Once the ingredients are combined, bring the sauce to a boil. Continue to stir constantly!
Then lower the heat to medium-low, to simmer the sauce for one more minute until you reach a stretchy consistency.
3. Bake Pasta
To the pot in which you cooked the pasta (or another large pot), add the pasta, frozen vegetables, drained vegan tuna and cheesy sauce. Give everything a good stir and then divide it between six meal prep containers. You can top the pasta with some extra grated cheddar-style cheese if you fancy, but that’s totally optional.
Bake for 30 minutes or until the top of the pasta bake is turning crispy and golden.
Store in the fridge for up to 4 days or in the freezer for up to 6 months!
