The dietitian in question is Jessica Kotlowitz, aka The Green Dietitian.
Vegans meal prep anything from soups and stews to pancakes! Other popular vegan meals to prep include salad jars and pasta salads, burrito and Buddha bowls, baked breakfast goods, overnight oats, and more!

What Does A Vegan Dietitian Meal Prep?
I’m so excited to introduce my dear friend Jessica Kotlowitz, as our first featured meal prep friend here on the VMPS blog. Jessica is a registered dietitian and many of you know her as The Green Dietitian. For years, she has inspired others, including myself, to better their knowledge of food and relationship with eating, and promotes healthy and easy to make plant-based meals.
Vegan Meal Prep Sunday aligns with her fuss-free food philosophy, empowering plant-based eaters to stay healthy in the long run without standing in the kitchen all day. It seemed only natural to check in with Jessica to find out how a typical meal prep looks like for her.
Firstly, like many people, Jessica prepares three days’ worth of meals as her meal prep routine. She plans her meals, using the the FREE VMPS Meal Prep Menu template.
An example of what Jessica meal preps in one meal prep Sunday session:
- Breakfast: Her infamous Chickpea Pancakes, as found on her website
- Lunch: Mediterranean Stew with quinoa
- Dinner: Lentil Soup from Earthy Andy’s blog
Jessica also shares that she always makes sure to prep vegetables, because she doesn’t usually have time to cook fresh vegetables on a daily basis. For protein, she likes to prep chickpea flour pancakes and red lentil soup. She finds these very satiating! She especially likes prepping soups in winter.
Why Does A Vegan Dietitian Meal Prep?
When Jessica first started working, she quickly realised that it wasn’t sustainable to cook fresh dinners every single night of the week and prepare daily lunches to take to work. In general, she realised that she needed to be prepared if she wanted to make sure that she was consistenly eating healthy meals.
She thus realised that for her, meal prep is the only practical and simple way she can maintain a nutritious diet. It allows her to live a healthy lifestyle in an achievable way! This is very important to her.
Tips For Meal Prep Newbies From A Dietitian
If you are new to meal prep, Jessica – The Green Dietitian, recommends to take things slowly and not try to prep too much in one go from the start.
Don’t try to prep every single meal for the entire week. Try to meal prep meals for three days. You can also try to only meal prep one component of a meal. For example, when she has a really busy weekend, she just preps one soup. It helps her to be able to quickly throw together at least a few meals during the week.
