Hi meal prep friends and welcome to Vegan Meal Prep Sunday! This is Lien – Vegan Meal Prep Sunday founder. There have been so many new preppers joining this meal prep party during the last few weeks that I thought it would be appropriate to introduce myself and inform you of what’s in store for Vegan Meal Prep Sunday.
I hope you are all well and are coping with the changes your lives have undergone in the last months!
Why I started meal prepping
For those who don’t know why I got started – meal prepping every Sunday was a solution to my eagerness to eat nutritious vegan meals without having to spend a ton of money or hours in the kitchen. Not only have I been able to achieve this, I’ve also found more peace of mind, because during a busy work day, I never have to decide what I will buy or cook for my next meal.
Why I started Vegan Meal Prep Sunday
With that in mind I started VMPS as a online meal prep resource, customised for vegan meals. I want VMPS to help empower busy people to likewise eat nutritious vegan meals, without spending lots of money or hours in the kitchen.
The goal of the blog is to become a comprehensive resource that guides all (vegan) meal preppers on their journey. This will include anything from quick recipes using all the cooking short cuts for the laziest of meal preppers to guidance on how to maximally save on food expenses. I will also share vegan lifestyle posts featuring my favourite vegan grocery stores, collaborations and recipes from other vegan meal preppers, helpful information like which storage containers to choose, and so much more!
What the future holds
In the next few months, I will be launching two offerings, of which one will be an Ebook. The other one will be revealed in due course (cue the suspense!). Both offerings will include nutritious vegan recipes, meal plan, and shopping guidance to assist preppers to make their meals ahead of time, aka meal prep friendly.
I’m very excited to start collaborating with other meal preppers and share their inspiring meal prep stories. This month, you will meet The Green Dietitian, a vegan and avid meal prepper who is also the advising dietician at VMPS.
